Hope you are well. This is a super easy Chicken Recipe.
This is HEALTHY, LOW CARB and SUPER EASY 🙂
Ingredients
800g of Chicken Breast (About 3 big chicken breast)
2 White onions
3 Capsicums
2 to 3 Cups of Chicken Stock
2 Tablespoons of Butter
2 to 3 tablespoons of Tomato Paste
120g of Mozzarella Cheese
Seasons – Garlic powder, Chilli Flakes, Salt and Pepper
Method
Add two tablespoons of butter into a medium heated pan. Once the butter is melted, add the chicken Breast. I used three big pieces as noted in the images.
Sear the chicken for 1 to 2 minutes on each side. Cut up the onion and capsicum during this time.
Add two cups of chicken stock into the mix with the onion and the capsicum until the chicken is fully cooked. If the stock evaporates before the chicken is cooked, add another cup of stock. Cut open the middle of the breast to see if it is fully cooked.
Turn the stove off, then add the tomato paste and mix everything through. Stir through all the seasoning.
Add mozzarella on top of the chicken breast.
Put in the oven, and let it broil until the cheese is melted.
