My favourite chocolate in the entire world is Reeses peanut butter cups.
I can get through the entire pack of minis (104g) in a matter of hours. Honestly, I used to buy a pack every weekend as my cheat day snack. I know, it is not the healthiest but man, it was soo delicious though! 🙂
Since I started my healthy low carb journey – I made my own peanut Butter cups.
Ingredients
Coconut oil
100g Chocolate (The darker the better)
3 Tbs Natural Peanut Butter
1 tsp Vanilla extract
Method
Combine Peanut Butter, vanilla extract and about 2 tablespoons of coconut oil. Mix until the mixture is smooth.
Melt chocolate in a bowl over a stove. Add 3 to 4 tablespoons of coconut oil and stir until all mixed.
I used a silicon cupcake mould. First, add the chocolate mixture to the bottom of the cupcake mould and freeze for 30 mins. Add in the peanut butter mixture and freeze 30 mins.
Top with the rest of the chocolate.
Take the peanut butter cups out of the moulds. You can run a knife around the edges if its too hard but silicon cupcakes make it so much easier!
Freeze these in a container and enjoy! 🙂
